Fattoria del Colle produces organic monocultivar extra virgin olive oil Moraiolo, Correggiolo (Frantoio variety) and, in greater quantities, an EVO oil mixed with the two varieties together for which the DOP Terre di Siena certification is requested. The Correggiolo variety has the characteristic of having very small slightly asymmetric ovoid shaped green olives. The colour of the oil produced with 100 % of the Correggiolo variety is golden yellow with slight green hues. The taste is distinctive for its bitter and spicy notes.
The aroma is full and complex, rich in hints of freshly mown grass and artichokes, with delicate traces of black pepper, mint and rosemary.

It is a small territory with vast areas rich in limestone, at an altitude of over 400 metres; it is well ventilated and distant from the sea so the dangerous oleic fly never gets there. The 2020 olive harvest at Fattoria del Colle in Trequanda has been exceptional for quality and quantity. Many small olives that have had a low yield, of 10%, of transformation into oil. The 2020 extra virgin olive oil has a fruity heady aroma (tomato, artichoke, freshly mown grass) and an excellent quality in taste.
