The new 2021 extra virgin olive oil of Fattoria del Colle is little, but organic and full of flavor!
Fattoria del Colle produces organic monocultivar extra virgin olive oil Correggiolo (Frantoio variety), Moraiolo and, in greater quantities, an EVO oil mixed with the two varieties together.
The Correggiolo variety has the characteristic of having very small slightly asymmetric ovoid shaped green olives. The colour of the oil produced with 100 % of the Correggiolo variety is golden yellow with slight green hues. The taste is distinctive for its bitter and spicy notes. The aroma is full and complex, rich in hints of freshly mown grass and artichokes, with delicate traces of black pepper, mint and rosemary.
The 2021 olive harvest in Trequanda has been poor of olives, some trees were entirely fruitless and others had beautiful loaded branches and all the rest of the canopy empty. Fortunately, the yield in oil is good and the taste of the golden liquid is intense so just a few drops are enough to fill the vegetables and cooked dishes with flavor.
We suggest matching with spelt salads, vegetable first courses, grilled meats. The extra virgin olive oil lovers know that Trequanda is one of the best areas in the world.
