Fattoria del Colle produces organic monocultivar extra virgin olive oil Moraiolo, Correggiolo (Frantoio variety) and, in greater quantities, an EVO oil mixed with the two varieties together for which the DOP Terre di Siena certification is requested. The Moraiolo variety has the characteristic of having round black olives
The colour of the oil produced with 100 % of the Correggiolo variety is golden yellow with slight green hues. A strong and penetrating aroma where one recognizes the fresh olive and artichoke, then hints of nutmeg. In the mouth it is fine and well balanced; it has great structure characterized by a taste of pepper.
We suggest serving on soups, on pasta dressed with wild boar, with a chickpea cream, on a fiorentina steak.
The 2020 olive harvest at Fattoria del Colle in Trequanda has been exceptional for quality and quantity. Many small olives that have had a low yield, of 10%, of transformation into oil. The 2020 extra virgin olive oil has a fruity heady aroma (tomato, artichoke, freshly mown grass) and an excellent quality in taste.
