The Vin Santo DOC Chianti is the most prestigious and most successful out of the dessert wine project desired by Donatella Cinelli Colombini’s husband, Carlo Gardini. Donatella does not drink sweet wines and had greatly reduced their production at Fattoria del Colle even though this winery, situated in southern Chianti, had a centenary tradition in the production of Vin Santo.
Carlo is very passionate about sweet white wines and has dedicated time and energy in the creation of small productions of signature wines, cared for by hand in every detail. This project includes the Passito, the Vin Santo and the prestigious Vin Santo selezione that we are talking about.
The Vin Santo del Chianti Doc selezione 2007 ages 14 years in the caratelli positioned in the attic at Fattoria del Colle. The wine stays in these barrels (of small dimensions from 50 to200 litres) experiencing the summer heat and winter cold. This is how the ageing of the Vin Santo takes place according to the rules of the Tuscan tradition.
In the end the Vin Santo that comes out of the small barrels is really a small amount, less than 35%, which is what the rules of the Chianti appellation require. That is why there are really few bottles of this selection produced. Something exclusive and refined to be gifted to those who know how to appreciate it! We suggest to not dunk biscuits in the Vin Santo. It is a popular custom greatly used all over Tuscany but it alters the aroma and taste of the wine.
