A slow and careful procedure that allows us to send in only perfect grapes that are at the same level of ripening.
Before the grape harvest the vineyards get divided into small parcels based on the tasting of the grapes. The area with the best quality potential is destined to the production of the Brunello Riserva. The selection takes place through tasting the grapes, like a century ago, chemical analysis confirms the decision.
The grapes usually come from a specific vineyard called Ardita on the highest point of the vineyards around the estate.
